Pink Cashew Elixir w/ Reishi Mushroom (vegan, gf)

Creamy, warm, comforting, tasty elixirs… is there anything better than that on a cold day?? I think not.
I love playing around with different ingredients that I have on hand and creating new recipes for you guys.

This delicious blend is filled with healthy fats, nutrients, and fiber and makes 1-2 cups ♥

A few notes on the ingredients:
Beet powder – To be completely transparent, I used this to add that gorgeous pink color to the elixir but also to add in the benefits of beets. I bought a bag of it from Community Natural Foods in Calgary and it was not expensive. You can also buy it in bulk (if you want just a few tbsp) at the downtown location
Mushroom powder – you can find these packs at health stores as a box or individual packs. You can also use any medicinal mushroom powder you have on hand.
Medjool dates – I prefer these over any other kind. I have tried using others but the flavor is less caramel-y. I buy them fresh with the pits in and then take the pits out just before using them.

PINK CASHEW ELIXIR

Ingredients
1 pack of Four Sigmatic reishi mushroom drink mix. You can also use 1/4 – 1/2 tsp medicinal mushroom powder
2 heaping tbsp cashew butter
2 medjool dates – take pit out before adding
1-2 tbsp coconut butter
1 tsp vanilla extract – I use alcohol free, I love the flavor better
2-3 tsp beet powder
2.5 cups hot water
2 pinches sea salt

**you can add in some collagen if you want too**

Directions:
1. Blend all ingredients in a high powered blender and blend until creamy and frothy.
