3 ways to add veggies + spice to your morning eggs!

Ahh, who doesn’t love a classic egg breakfast. Two eggs sunny side up, bacon or ham, two slices of toast, and some hash browns. Honestly, I LOVE that kind of breakfast but I also like making meals like that more healthy and nutrient dense. I love eggs but I am not going to eat eggs benny every day, ya know? Although, wouldn’t that be the life (especially OEB’s eggs benny… if you haven’t been there yet (in Calgary), you are seriously missing out). SO, with my efforts to make my beloved eggs more health-friendly, I’ve been making it a point to add in different veggies to my breakfasts along with different herbs, spices, ect. I’ve come up with a few “veggie-friendly” recipes for egg-lovers.

Here are 3 ways to add veggies to your eggs and increase you nutrition intake!
(Eggs Benny not included, sorry. Maybe one day.)

ONE

Leek + Zucchini Eggs
1/2 cup chopped leeks (white part only)
1/2 zucchini chopped
1 garlic clove minced
1-2 tbsp ghee or grass-fed butter (avocado oil works too)
2 eggs
Salt + pepper

Directions: Saute leeks, zucchini and garlic together on low heat so you can slowly & thoroughly cook them without burning. Add a bit of salt and pepper according to taste preference. Once zucchini chunks are soft and cooked, scoop this mixture out of the pan and place on your plate. Then, turn the stove top to medium heat and crack 2 eggs on top. Cook them according to your preference. I like to sprinkle salt and pepper on top and cook for a minute or two, then add a splash of water and cover with a lid to “steam cook” until the whites are fully done and the yolks are semi-soft. Add cooked eggs on top of leek and zucchini mixture. Serve with avocado, chili flakes, sauerkraut, and/or sprouted grains toast.

TWO

Garlic Asparagus Eggs (fresh dill option)
6-8 asparagus stalks
1 garlic clove minced
small handful micro greens (optional)
2 eggs
2 tbsp oil of choice – I choose avocado oil
Salt + pepper
1-2 tbsp fresh dill chopped (optional)

Directions:
Saute asparagus and garlic together on low heat so you can slowly & thoroughly cook it without burning. Add a bit of salt and pepper. Once asparagus stalks are a bit tender, separate stalks into 2 sections and crack an egg on top of each section. Cook them according to your preference. Personally, I like to sprinkle salt and pepper and some fresh dill on top, and cook for a minute, then add a splash of water and cover with a lid to “steam cook” until the whites are fully done and the yolks are semi-soft. Don’t burn the asparagus!

THREE (not pictured)

Sweet Potato ‘nests’ + Poached Eggs (or fried)
1 small sweet potato grated (use bigger side of grater for thicker pieces)
2 eggs
1 tbsp white vinegar (optional)
Salt + pepper
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp oil of choice (I choose avocado oil)

Directions: 
1. Heat up a frying pan over low-medium and heat up your oil. Add in grated sweet potato, salt, pepper, garlic and onion powder and saute up, stirring continuously so it doesn’t burn. Once the sweet potato is tender, divide into two piles and form 2 “nests”. Crack your eggs on top of each one, season, and let cook for a minute or two. I add a splash of water to the pan and cover with a lid to help cook the eggs. I cook until the whites are fully cooked and the yolks are half cooked but still a bit runny (that good good). You can also place cooked poached eggs on each nest once their done and eat your eggs that way too. Not sure how to poach eggs? Check out this awesome guide here.

Serving options (any of these are amazing with eggs!)
Sauerkraut (I love dill or beet flavored) + Avocado
Scrambled eggs with garlic and melted vegan cheddar cheese
Gluten free toast (my go-to is always Little Northern Bakehouse)
Gluten free everything-spice bagels (O’doughs is my go-to brand)
Turkey Sausage / Bacon (or chicken sausage if you’re not weird
about the whole chicken+egg combo)
Cashew dip or beet dip (see above pic)
Microgreens or sauteed greens
Basil leaves
DIY everything bagel spice mix
