Banana Oat Muffins – GF DF

When I was staying at my sisters home a few months ago, she made these incredible banana oat muffins that I couldn’t get enough of. They were from the cookbook Company’s Coming (if you know, you know – the recipes are classic and soo good haha). I wanted to make these at home, but a gluten-free and dairy free version of them so I could eat them without having a reaction! I also swapped regular sugar for coconut sugar and used coconut oil in these. I tested these bad boys out the other night and they were 10/10. So good, especially heated up with a bit of coconut oil, butter or vegan butter. YUM.

You can add in chocolate chips or crushed nuts if you want! I haven’t tried this recipe using flax eggs yet so I’m not sure if they would turn out okay.
